Soljanka in DDR style

Ingredients for 4 Persons:

  • 1,3 kg smoked pork + goulash meat, finely chopped 1 Package Bacon
  • 1 -2 glasses gherkin(s), chopped small
  • 2 glasses Letcho
  • 1 can peas
  • 1 tin of corn
  • 200g cherry tomatoes
  • 1 cup of crème fraîche or sour cream
  • Salt and pepper
  • Ketchup for thickening
  • Paprika and garlic
  • Water
  • Oil for frying

What better way to warm up your belly in the cold season than eating a nice warm soup or a steaming stew? Inspired by our last team cooking, we have something very special for you this month: A Soljanka – a soup from the eastern part of Germany – and super delicious!

First, fry the meat nicely in some heated oil. If it starts to set, add a little water. 

Next dice the cherry tomatoes, crush the garlic and add it to the meat. Fry everything together briefly. Then cut the cucumbers into small pieces and add them with some cucumber water and all spices (including ketchup). Add the other ingredients (corn, peas, letscho) and pour everything in the pot with 1 to 1 1/2 liters of water and simmer the soup for 20 minutes. 

Season the soup with salt and pepper.               

Ideally, prepare the Soljanka the evening before. The next day just warm it up.  It does taste even better then.

Important: The Soljanka must stand for a few hours before you eat it.      

You can serve it with wonderfully roasted ciabatta bread and cream fraiche to stir in and refine. Enjoy and let it warm you up!
