Cheese Spätzle with beans and pork fillet

Ingredients for 2 persons:

For the Spätzle:

  • 150g Flour
  • 3 Eggs
  • Salt
  • 1 Onion
  • 20g Butter


Remaining ingredients:

  • 500g Pork Filet
  • 2 red Onions
  • 125g Bacon Cubes
  • 200g green Beans
  • Olive Oil
  • Salt and Pepper
  • Parsley
  • 30g Cheese (e.g. grated mountain cheese)
  • 50g Emmental, grated


Everybody knows cheese noodles and many people love them (just like me…)! We have spiced up the popular Swabian dish for our monthly recipe with pork filet and green beans…hmm! And that is how we prepared our Spätzle freshly:

First, preheat the oven to 180° top/bottom heat (180 degrees circulating air).

Then we start with the Spätzle. To make them yourself (by the way, it’s easier than you think), first put the flour in a bowl, make a little swale in the middle and beat the eggs into it. Then add a pinch of salt. Add 40 ml of water and mix everything to a fine dough of smooth, tough consistency. Then let the dough rest for 15 minutes.

In the meantime, season the fillet on both sides with salt and pepper. Then fry the meat briefly in a pan in a little oil (so that it does not fall apart later in the oven). Take the meat out of the pan and place it in an oven-proof dish, drizzle it with a little oil and leave it in the preheated oven for about 30 minutes.

In the meantime, put the cheese in a bowl (or grate it if it is still in one piece).

Bring the water in a pot to boil. Put the Spätzle dough through a Spätzle slicer into the boiling water. Let the free floating Swabian noodles soak in the water until they rise to the surface. Then remove them carefully with a skimmer.

Meanwhile you can already wash and prepare the green beans. Peel and slice the onion and put it in a pan with some oil. Fry the onion slices in it until they are crisp and golden brown. Then add the bacon cubes and fry them as well. Add the green beans and sauté everything together briefly on a low heat and then put aside.

Melt the 20 g butter in a pan. Cover the bottom of the pan with the first layer of Spätzle and then add a layer of cheese. Place alternating layers of Spätzle and cheese in both pans. Finally add the fried onions, green beans and diced bacon to the Spätzle and mix all together. Season it with salt and pepper and garnish with parsley.

Take the pork fillet out of the oven and cut it into slices. Drape the fillet slices on the Spätzle and serve all together.
